Ingredients

 

6 medium sized eggs

230g of salmon

100g colby cheese – grated

384g kumera (sweet potato)  (1 largish one)

230g zucchini (courgette)

1 large brown onion

1 tbsp olive oil

Method

 

 

Preheat oven to 180 degrees

Chop up all the veggies and roast them in the oven (with 1 tbsp of olive oil) for approximately 20 minutes.

Place the veggies into a 25cm quiche dish.

Remove skin from salmon portions, dice and throw in with the veggies.

Grate 100g of colby cheese and mix into the salmon and veggie mixture.

Whisk 6 medium eggs and pour over the mixture.

Place in the oven for 30 – 35 minutes until egg is set and top is golden.
